Double Gloucester cheese is made in many parts of the UK both on farms and in large dairies. It has a characteristic light orange hue given by the addition of annatto to the milk. Annatto is an orange-red condiment and food colouring derived from the seeds of the achiote tree.
Pros: An excellent source of calcium, which is important to help guard against osteoporosis. Wensleydale is also a good source of vitamin B2, a water-soluble vitamin which helps the body release energy from protein. It also contains vitamin B12 for people who don't eat meat.
The taste of Cotswold is creamy, buttery, sweet and mild yet full-flavoured like cheddar. The savoury taste of chives and onions gives it that extra zing. This variation of Double Gloucester pairs well with beer, Zinfandel or Shiraz and is popular as a pub cheese in England.
Formerly known as Leicester, or Leicestershire cheese, this is a hard cows' milk cheese made in much the same way as Cheddar, but with a moister, crumblier texture and a milder flavour. It is coloured with a vegetable dye called annatto, which gives the cheese its distinctive deep-orange hue.
